Beetroot Biryani

1. Basmati rice -2 cups ( soak for 20 min)
2. Beetroot-medium-2( peel and cut into cubes)
3. Ginger-garlic paste-2 tsp
4. Onions sliced-2 medium
5. Green chillies-6
6. Mint(Pudina)
7. Cilantro (Kothmeera)
8. Water 3 cups
9. Oil-2 tbsp
10. Salt to taste
Whole garam masala:
Dal chini 1 inch
Shahjeera -1 tsp
Elachi- 4
Peppercorns- 8
Bay leaf-2
Star anise-2
Method:
-Heat oil in a deep bottom pan, add whole garam masala.
-Add onions and pinch of salt and fry until translucent.
-Add ginger- garlic paste, fry until raw smell is gone.
-Add chopped mint and cilantro.
-Add beet-root pieces, sauté for some time.
-Drain the rice and add it to the pan.
-Add water and check for taste.
-Cook on medium flame till rice is done.
-Garnish with cilantro and enjoy with raita.
